It was a cold weekend so we spent yesterday afternoon in the warm, doing some baking.
Gemma and Jacob wanted to make some Annabel Karmel Easter Chick cupcakes. They are really simple, but very effective!
Start with a basic fairy cake recipe:
125g caster sugar
125g self raising flour
1/2 teaspoon baking powder
1 tsp lemon zest
Mix it all together, and bake at 180 for 18-20 minutes. Once cooled, make up some icing, and add 2 drops of yellow food colouring to get a pale yellow ‘chick’ colour. Ice the cupcakes, and decorate to look like chicks! We used blue icing pen for the eyes, (as Gemma and Jacob wanted them to have blue eyes) and for the beaks we used some orange flavoured chocolate buttons, which we cut in half. They look lovely, and are yummy too!
Gemma and Jacob have taken some to school for their Easter Coffee Afternoon tomorrow, and we have kept some at home for us.
