I can hardly believe I am writing this, but it’s been almost 3 years since I started blogging – 3 years! I honestly don’t know where the time has gone, and I can’t believe how much blogging has given me over those 3 years – an income, the chance to try some amazing products and work with some incredible brands – but most of all, friendship. The friends I have made through blogging are now some of my best – people I know will be there any time of day or night if I need a chat or some advice, the people who were there when Eliza was born, cheering me on and sending gifts and well wishes, the people I would never have known if it wasn’t for this blog. And for that, I am so grateful for my little corner of the web, and so grateful to you guys – the ones who read it, share your own stories and make me smile on a dark day with your words of wisdom and support.

    We have a family favourite called Mixed Up Dinner which came about when my Uncle came to stay and Mum and Dad didn’t have much in so they just threw together what they had in their cupboards and we all loved it. It just sort of stuck.

    Ingredients: Mushrooms, can of tomatoes, Corn Beef, cabbage, onions and garlic and rice to serve.
    Method: Sautee your onions and cabbage. Add in your garlic and mushrooms and when mushrooms soften chuck in your tomatoes. While everything is cooking, put on your rice (follow packet instructions). Add your corn beef right at the end and just warm through.

    Its a quick, easy dinner to use up the odds and sods. It’s fairly healthy and it feeds between 4-6

    Macaroni and. Cheese, my Mum makes absolutely Delicious homemade Macaroni Cheese which all the family and others enjoy.

    vegetarian lasagne. we make it with whatever vegetables we have to hand, usually broccoli, carrots, mushrooms, courgettes, etc. Everybody helps prepare the sauteed vegetables, tomato sauce with garlic and herbs, and cheese sauce, then we layer up the lasagne and cook till it is browned on top.

    Shepherd’s pie <3 or sometimes, we do cheesey jacket potatoes, where we scoop out the cooked potato, mix in cheese and bake them a bit longer.

    We have a new favourite. It’s pork tenderloin rolled in brown sugar, salt and pepper, then wrapped in bacon and covered with a chutney and mustard glaze.

    My favourite family meal is a roast dinner with all the trimmings. It’s a time to sit down together and share what has been happening whilst sharing meat and lots of veggies. Perfect.
